high revving small engine question

Exhaust Temp vs. Air/Fuel ratio meter
Air/Fuel ratio meter is pretty straightforward as my knowledge goes it shows how rich/lean your air/fuel ratio is.
How about Exhaust Temp? Also, why does exhaust temp meter normally costs 2x the price of air/fuel...
